Desserts are one of my weaknesses. You won’t be able to resist this cheesecake, with its fresh sliced strawberries and light and fluffy texture! Adding the sour cream, sugar and vanilla to the top of the cheesecake created a light and creamy topping with a slight tartness that complemented the fresh berries very well. It was DIVINE!! I was so happy with the results that I’ve decided that any time a make a cheesecake with berries I will be using sour cream on top! This recipe is “officially” for a strawberry cheesecake but you could definitely use any combination of fresh berries that you like. This time I just opted for slices of strawberries place on top, but I think next time I may add some fresh raspberries as well. We decided on making one of Korea’s most popular dishes, Japchae, or Glass Noodles. If you have friends or family on this or that diet, this is a dish that just might please everyone (well, except for meat-only eaters). The key to this recipe is adding each ingredient separately - , the sweet potato takes the longest to cook, so it goes in first. Feel free to customize! Add mushrooms (add with the onions); matchstick carrots or fresh spinach leaves (add them the same time as the kale/swiss chard). Ingredients: 6 ounces dried Korean glass noodles (sweet potato) 1 medium sweet potato 4 big handfuls kale and swiss chard 1 onion 1 stalk green onion 3-4 cloves garlic 1/2 cup soy sauce 2 tablespoons brown sugar 1 tablespoon sesame oil 1 tablespoon roasted sesame seeds 1 tablespoon cooking oil Directions: PREP INGREDIENTS: 1. This cheesecake is the perfect example of something that is simple, that can be made infinitely more complicated.  Google a recipe for cheesecake and you’re sure to find methods that call for you to cook it in a water bath to keep it from browning or tell you that you’ve got to stand on your head while reciting the alphabet backwards for the last 14 minutes of the cook time to keep it from cracking.  Ugh.  Complicated.  I’m here to tell you… this is not one of those recipes. Yes, this cheesecake will brown – on the edges AND the top.  So what.  And it will probably crack in the middle too.  But guess what?  It will taste just the same.  Yep, sure will.  And if you don’t like the way it looks, drizzle it with some chocolate syrup and add a dollop of whipped cream – heck, even a dollop of Cool Whip…  yes, I said Cool Whip.  This is seriously the easiest cheesecake.  It’s perfect for when you need something UNcomplicated. The name describes this dessert perfectly. It is heavenly… and dangerous. For your thighs, that is. It’s one of those desserts you can’t. stop. eating…… So don’t say I didn’t warn you!  😉 INGREDIENTS 1 (15.35 ounce) package Double-Stuffed Oreo cookies 1/2 cup butter, melted 2 packages (3.9 ounce, each) Instant Chocolate pudding mix 3 1/4 cups cold milk 2 (8 ounce) containers Cool Whip 1 (8 ounce) block Cream cheese, softened 1 cup powdered sugar INSTRUCTIONS Take a large zip-lock bag and place all the Oreo cookies inside. Seal bag shut and place on counter. Using a rolling pin, crush the cookies until they are small chunks/crumbs. You want them to still be chunky and small, but not fine crumbs. Set aside half of the cookie crumbs for the topping. Pour the other half of cookie crumbs into a 9×13 baking pan. Pour the melted butter over the crumbs and mix well to combine. Here’s a deliciously simple weeknight dinner for you that I prepared for Goodbite.com and the Real Women of Philadelphia.  This is one of those dinners the the whole family loves.  Creamy with lots of chicken and full of flavor 🙂  Enjoy!! INGREDIENTS: Chicken Florentine Bowtie Pasta 2 tablespoons extra virgin olive oil 1 cup finely chopped white onion 1 clove minced garlic 4 cups baby spinach leaves 2 cups cooked shredded chicken breast 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 2 Cups Philadelphia Cooking Creme 1 pound bowtie pasta or other small noodle 1 1/2 cups shredded mozzarella cheese Intructions: Preheat oven to 350 degrees F. and spray a 9×13 inch baking dish with non-stick cooking spray.  Place oil in Dutch oven or large pot over medium heat. Broccoli Tots are a fun and healthy play on tater tots made with finely chopped broccoli in place of potatoes. I'd say that the most important part about making these is to make sure you get as much liquid out of the broccoli as possible before mixing it with the other ingredients.  If not, they'll just fall apart and turn out soggy.  Still tasty, but not as good as when they get that little bit of crisp on the outside. My slow cooker is my best friend and I use her at least 3 to 4 times a week (yes, my slow cooker is a girl). 🙂 If I can’t throw it together in a matter of minutes, it just is not going to happen. However, every once in a while, I completely space to put my food in the crock pot in the morning and so when dinner time rolls around, I am scrambling to find something to feed my family.  I was in that exact dilemma a couple of weeks ago and came across a recipe for Baked Chicken.  I love how tender and perfect my chicken cooks in the crock pot and feared that this chicken might be dry.   The end result was amazing!  This is definitely being added to our regular dinner rotation. This baked chicken is so incredibly tender and full of flavor- the honey adds sweetness while the soy sauce adds savory- I promise that it will quickly become one of your favorite meals!
