A few years ago I made a delicious one-pan dinner with some chicken apple sausage, potatoes, and apples. It’s such a great meal and is full of some great Fall flavors. This time though, I decided to do a paleo version. Instead of regular white potatoes, I used sweet potatoes and the results were fabulous! This one-pan paleo dish is full of great flavors from the apple and sweet potatoes, making for quick tasty meal! Ingredients 4-6 Chicken Apple Sausage links, sliced 2 medium apples, cored & diced 3-4 sweet potatoes, diced ¼ C water Instructions Heat large pan on stove or electric skillet on medium high heat. Cut sausage into slices. Add to the skillet. While sausage cooks, dice apples into small chunks (I left the skin on) and cut the sweet potatoes. Add to skillet. It’s strange to think about all the frozen dinners I ate because many were dishes that are so, so, so, simple to put together. Chicken cordon bleu is one of those simple recipes. But regardless, how could you not take pleasure in rolling up a piece of chicken with ham and cheese, and rolling it in breadcrumbs? Start out with some chicken cutlets. These are super thin slices of chicken breast that you can buy from the store. CHICKEN PARMESAN BAKED ZITI

To make the baked ziti, I cooked up a batch of penne ziti and then tossed it with the sauce.  Then for the “chicken parmesan” twist, I added in some shredded cooked chicken, chopped fresh basil, and lots of grated Parmesan. I know that traditional chicken parmesan requires you to bread and pan-fry the chicken.  But I thought the dish already had plenty of flavor and texture without adding the extra fat/calories.  And hey, true to the name, we’re including lots of chicken and lots of Parmesan.  So I’m sticking with it. Our family's favorite meatballs are loaded with fresh herbs and cheese. They are bursting with flavor.  You can make pasta sauce, but there is truly no need. They are the best daggum meatballs ever!  No sauce required. Simple recipe, magnificent meatballs!  Last week we had my bestie over for her birthday and I made my favorite 40 Minute Quick and Easy Cheesy Meat Lasagna, It is outrageous and goes in the oven in just 15 minutes. Well, that was until today when I finally got around to making it in bowl form 4 years later. I had pinned a recipe from Whole Foods website years ago for sushi bowls because I loved the idea and just now after months of having the sushi rice and nori sitting in my pantry I’m finally getting to it – but seriously why did I wait this long??
