Salted Caramel Turtle Thumbprint Cookies

If you’re going to add caramel you may as well salt it, right? I still haven’t gotten my brother and sister to like salted caramel but one of these days I know it’s going to happen. They must have strange taste buds :). I’ve been posting cookies like crazy, but tis the season! Besides you can never have too many cookie recipes. And this one, you just can’t do without. We’ve made a lot of Pretzel Bites over the years, but these Santa Claus Pretzel Bites are our all-time favorites.  And all you’ll need to make these adorable Christmas treats are pretzels and candy melts.   Sweet, salty and delicious and oh so very adorable … the ultimate combination for a winning Christmas recipe. MAKE COOKIE MONSTER CANDY BARK

I couldn’t stand it anymore. . . I had to make a Cookie Monster themed dessert! It started with this ice cream, then I spotted this fudge. Then just the other day, my friend Kristan posted a Cookie Monster cake. So that’s how the candy bark happened – and lucky for me, Wilton makes candy melts in dark blue. Did you know this?? What that means is that this candy bark couldn’t be any easier. It only requires 3 or 4 ingredients depending on the type of cookies you buy. This bark would be fantastic for a party – think Sesame Street themed. Or maybe for a holiday like Halloween. Or any day, really. I mean do you really need a reason to make a Cookie Monster dessert? RAW SNICKERS DOUGHNUTS

Since going gluten free my doughnut dreams have been somewhat shattered and my relationship with these baked goods have come to a stand still as I have yet to find a doughnut that tastes like the Krispy Kreme’s I used to devour and love. Fed up with waiting, I decided to make own version inspired by a peanut slice I picked up at The Good Earth a while back. Everyone Loved These Valentine’s Cookies! I brought these Valentine’s Day Slice N’ Bake Cookies to my women’s bible study and they loved them! First, they couldn’t believe that they were homemade, they kept asking questions about how I made them. Since the process is kind of difficult to describe in words, I created a short step by step video that does a great job at walking you through what you need to do. BUTTER PECAN COOKIES

These Butter Pecan Cookies are full of crunch, soft, chewy and buttery! They get even better the second day too, making them a great cookie to make ahead! So yesterday we officially closed on our new house! Buying and selling a house is SUCH a process, it was a huge relief to at least be done with the buying part. Now we are packing the last few things and slowly getting moved. We’ve got movers coming Monday to move all the big stuff, but we can hardly contain ourselves – we have been moving some boxes on our own as well. Plus I’m pretty sure that both the hubs and I are nesting. I don’t know if guys can nest or not (technically they lack all the hormones and stuff), but we’ve been collecting baby stuff for a little bit now and it’s all been in boxes. Peanut Butter Chocolate Chip Reeses Cookies

Oh YUM! This cookie is like a peanut butter shortbread with a Reeses Miniature in the middle. INGREDIENTS : 1/2 cup butter, softened 1/2 cup creamy peanut butter 1/2 cup sugar 3/4 cup brown sugar 1 egg 1 tsp vanilla 2½ cups flour 1 tsp baking soda 1/2 tsp salt 2 cups mini chocolate chips 1 (12 oz) bag Reeses Miniatures INTRUCTIONS : Preheat oven to 375°. With electric mixer, cream butter, peanut butter, sugar, and brown sugar. Mix in egg and vanilla. Add flour, baking soda, and salt. Mix in mini chocolate chips. Mixture will be crumbly. Using cookie scoop, press mixture into scoop to pack into a ball and drop onto cookie sheet. Bake for 8-9 minutes, no more. While cookies bake, unwrap the Reeses candies. Right as cookies come from the oven, press a Reeses miniature half way into the center of each cookie. Almond Joy Cookies

***Feel like you’re seeing double?  Yes, this is a repost of a previous recipe. I’m reposting it for the holidays, as it’s become quite popular, and I’m adding in a couple of hints that might help you along come baking time…. It seems that a lot of people are having a rough time with the cookies spreading.  My guess is that they haven’t used the correct amount of coconut.  Make sure that you grab a 14 oz. bag of coconut.  There are 10 oz. and 14 oz. bags available at my grocery store.  Go big! Also, parchment paper and wax paper are two completely different things.  Do not try to bake these on wax paper.  The paper will melt.  I recommend parchment paper or a Silpat mat.  The cookies are sticky, so take care in removing them from the parchment once they’ve cooled.  Slide a thin spatula under each cookie to remove it. OK, back to the original post.  And…..go….*** Sometimes, simplicity is key. And in this case, simplicity is delicious...
