TRINIDAD CHICKEN PUFFS RECIPE

Gambar
There is nothing that reminds me about the joys of childhood more than thinking of chicken puffs. When I see a puff, I think of all of the birthday parties we attended and all of the games I played. Did I mention I was 150% a tomboy? In fact "play" was a nickname my aunt called me from an early age. I found any opportunity to be running, jumping, diving anywhere and 9 out of 10 times, I was the only girl in the group. And on numerous occasions, these puffs saved my life. A staple at all family events, this light puff pastry (choux pastry) is usually stuffed with well-seasoned chicken or cheese or tuna. And are usually gobbled up in no time. Today I reminisce and share the recipe for my favourite of them all, chicken puffs. Do you know that you can use choux pastry mix to make eclairs too? So I'm basically giving you a many in one recipe today. Thank me later. Have you every had chicken puffs? I hope you have, and if you didn't I wish you would take some time and try t...

Tom Yum Noodle Soup

Gambar
Sour and spicy soup made from lemongrass, kaffir lime leaves & galangal filled with prawns, mushrooms, tomatoes , onions and rice vermicelli noodles. Delicious & ready in 20 minutes. Friends are great… most of the time….. until they become annoying and you want to just kick them in the face. You know… the time they think it’s the funniest thing in the world when they start (and won’t stop)  repeating everything you say. Ok fine. We were 7. But still… so annoying. Or the time you had to threaten to end the friendship just because they didn’t feel like sharing their ice cream. Ok still 7. Nevertheless…. annoying. And how about the friend who instead of saying “Hi, how are you” asks “When are you going to make Tom Yum” for the 100th time? I get it. You like Tom Yum. So here is your damn Tom Yum Miss P. Ingredients 3.75 oz rice vermicelli, soaked in water for 5 minutes 4 cups prawn stock, chicken broth or water (see notes 1) 4 lemongrass stalks, bruised and cut into 3" length ...

Kadai Paneer

Gambar
Kadai Paneer – paneer and bell peppers are cooked in a spicy masala which gets is flavor from freshly ground coriander and chilies! Enjoy it with naan or roti. Paneer is my husband’s favorite vegetable (if you consider it as a vegetable that is, Indians definitely do!) and green pepper or capsicum as we call it in India is my favorite veggie so it’s rather surprising that I am so late in posting this Kadai Paneer recipe which is basically paneer and bell pepper cooked in a spicy masala. Kadai paneer is one of the most popular paneer recipes. It’s there on the menu in almost all Indian restaurants and best enjoyed with butter naan. It also tastes great with plain paratha. This paneer sabzi gets its unique flavors from fresh ground coriander seeds and dried red chilies. The spices are dry roasted till fragrant and then ground to a fine powder. The addition of fresh spices makes this super flavorful. It’s amazing how much difference the addition of fresh spices can make to a dish. They re...

Chicken Keema-Ghuguni, How to Make Yellow Peas with Minced Chicken

Gambar
Chicken Keema-Ghuguni or Mangsho-Ghuguni, is a traditional east Indian dish. Mangsho-Ghuguni is usually made with chunks of goat meat cooked with yellow peas. Anyone from the eastern part of India is familiar with the taste of this dish. Consider this as the Indian version of chili that you find here in the USA. I switched the chunky meat with minced chicken. I have used minced turkey too and it tastes really good. It’s a hearty, filling dish and honestly you don’t need rice to naan to go with it. This Chicken Keema-Ghuguni is a wholesome dish in itself. INGREDIENTS 2 cups yellow peas (soaked for couple of hours and boiled) 1 and 1/2 cup Minced Chicken 1 big Onion finely chopped 1 TBSP Ginger Paste 2 TBSP Garlic Paste 2 big tomatoes chopped 1 TSP Turmeric Powder 2 TBSP Red Chili powder 1 TBSP Coriander Powder 1 TBSP Cumin Powder 1 TBSP Garam-masala powder  1/2 cup Oil Salt as per taste Chopped Onion- chopped green chilies- chopped cilantro, wedges of lemon for garnishing METHOD Was...
