VEGAN NO-BAKE CHOCOLATE CARAMEL TARTS

Gambar
These vegan no-bake chocolate caramel tarts are just pure decadence. I got the recipe idea from a Tasty video I saw on facebook, and thought – hey! That could easily be veganized! You know, as you do. It’s a simple 3-layer chocolate caramel tart, starting with a crushed oreo base and then a gooey caramel center and topped with chocolate ganache. The caramel center is tricky, it involves boiling sugar, and boiling sugar is always a bit tricky. I didn’t use a sugar thermometer this time – usually if I’m boiling sugar, I want to know exactly what temperature I should boil it to, and that is why my honeycomb crunchies and my vegan fudge come out so well! But this was the much more vague ‘watching the color of the boiling sugar’ method. Tricky. Vegan no-bake chocolate caramel tarts with a crushed oreo cookie base, a gooey caramel center and a chocolate ganache topping. INGREDIENTS For the Crusts: 24 Oreos 1/4 cup (56g) Vegan Butter/Margarine For the Caramel Centers: 1.5 cups (150g) Sugar 1/...

VEGAN BREAKFAST EGGS

Gambar
As a vegan, I get more questions about replacing eggs as a food, or in a recipe, than any other ingredient – even more than cheese! Whether you decide to stop eating eggs in favor of a plant based diet, or because they don’t agree with you or with a loved one, don’t fear! I’ve got your back with this recipe for Vegan Eggs! Ham and Cheese Quiche (gluten free or regular)

Gambar
This gluten free Ham and Cheese Quiche is perfect for brunch but is hearty enough for dinner. Full of ham, bacon and cheese, it’s a protein packed meal full of smoky flavor – a sure crowd pleaser. This easy ham and cheese quiche recipe is a spin on our family’s bacon and swiss quiche. Although that one is still my favorite, it’s always nice to switch it up every once in a while so you don’t get bored. Ingredients 1 9-inch gluten free pie crust, par baked* 1 C Cure 81 ham, diced 4 slices bacon, cooked and crumbled 1 1/2 C cheddar cheese, shredded 1 Tbsp gluten free all purpose flour (or regular) 3 eggs 1 1/2 C milk 1/8 tsp fresh ground black pepper Directions Preheat oven to 350 degrees. Pan Fried Spinach & Cream Cheese Stuffed Chicken

Gambar
This pan-fried spinach & cream cheese stuffed chicken however, solves that problem First, just like the name says, you pan fry the chicken. Then you add the filling, cover the chicken and heat it through. Simple, yes? And no bacon in sight! You don’t need to cook the spinach cream cheese filling, you simply have to heat it up. That’s the brilliance of pan frying the butterflied chicken breasts instead of baking them in the oven wrapped in bacon. The filling doesn’t leak out ( as long as you are careful) and you can heat it up slowly and surely. This Pan Fried Spinach Cream Cheese Stuffed Chicken is one of the best skillet dinners I have made in a while! INGREDIENTS 4 chicken breasts (1) 10-ounce package frozen chopped spinach, thawed and squeezed dry 1/2 cup cream cheese at room temp 1/4 cup of Parmesan  cheese 1 tbsp minced garlic 1-2 tbsp minced chives or green onions 1/4 tsp pepper salt to taste INSTRUCTIONS  Place plastic wrap on top of each chicken breast and using a ...

PALEO HOMEMADE TWIX BARS

Gambar
These Paleo Homemade Twix Bars have all the delicious layers of the popular candy, but made with wholesome ingredients. Sweet, delicious, and easy to make. They also happen to be gluten free, dairy free, and vegan. You will absolutely love these! The caramel isn’t technically a caramel at all. It’s almond butter that is sweetened with maple and has a little coconut oil mixed in. It’s easier than a traditional caramel that has to come to a certain temperature and can easily be over/under cooked and not turn out right. It’s crazy how much it actually tastes like caramel. I also made a sunflower butter version that was equally delicious- it wasn’t as pretty though so the almond butter was used. Feel free to use your favorite nut butter for that layer. Ingredients Shortbread 2 cups almond flour 2 tablespoons coconut flour 1 teaspoon vanilla 1/3 cup melted coconut oil 1/3 cup maple syrup Caramel Layer 1/2 cup creamy almond butter 1/3 cup melted coconut oil 1/3 cup maple syrup 1/4 teaspoon s...

BBQ CAULIFLOWER & CHICKPEA VEGGIE BURGERS

Gambar
Tons of delicious BBQ flavor packed into these easy veggie burgers!  Everyone will enjoy them! I feel like I sound like a broken record, but things have been busy around here lately!  We went on a trip to Iowa to visit my husband’s family and then a few days after we got back, my 8 month old got really sick with his first virus.  Then, I got sick with a bad cold and then we had a friend come visit for a few days.  And, then my sister and her boyfriend came to visit.  Thankfully, both Eli and I were better by that visit! My sister hadn’t seen Eli since the day after he was born and he was in the NICU so it wasn’t very easy to hold him.  She had told me that her and her boyfriend had made my BBQ Cauliflower and Chickpea Tacos on one of their first dates, so I thought it would be fun to make a variation of that recipe on their first night here. The weather has been perfect here lately and we’ve been really enjoying sitting out on the porch in the evenings so I...
