Cherry & Chocolate Fudge

Ingredients: 2 cups white chocolate chips (11 oz bag) 7 oz jar marshmallow creme 3/4 cup (6 oz) butter 1/2 cup granulated sugar 3/4 cup heavy cream pinch salt 1 Tbsp cherry flavored gelatin 1/2 cup chopped dried cherries 10oz dark chocolate, finely chopped Instructions: 1. In a large saucepan, melt the butter with sugar, cream and a pinch of salt. Bring to a boil over medium high heat. Once boiling, set a timer for 5 minutes and stir in cherry gelatin. 2. After 5 minutes of boiling, remove the pan from the heat. 3. Place white chocolate and marshmallow crème in a large mixing bowl. Pour the hot pink mixture over top and stir until all the chocolate is melted and there are no white streaks of fluff remaining. 4. Fold in the dried cherries. 5. Pour the fudge into a foil-lined 9inch square pan sprayed with nonstick spray. 6. Refrigerate 20 minutes or until slightly set. 7. Chocolate Peanut Butter Nice Cream

Extra chocolatey peanut butter nice cream – it’s like eating a frozen peanut butter cup! So this chocolate peanut butter nice cream? I could eat it straight from the blender. Oh who am I kidding… I do eat it straight from the blender. And on more than one occasion, it’s been my dinner. Thankfully the ingredients are so healthy that it’s actually quite a balanced dinner! The recipe was adapted from my Healthy Chocolate Ice Cream, and I like it even better than the original recipe. Mostly because it has more peanut butter. Ingredients 4 overripe bananas, chopped and frozen 1/4 cup peanut butter, or allergy-friendly sub 1/3 cup cocoa powder optional 1 tbsp dutch cocoa or chocolate protein powder 1/4 tsp pure vanilla extract 1/8 tsp salt Instructions Make sure the bananas are at least partially brown before freezing them. BLUEBERRY, VANILLA AND CHOCOLATE ICE CREAM SANDWICHES

Looking for something rich, creamy and smooth? This coconut ice cream is just what you need in your life right now.  This cruelty-free coconut ice cream is unbelievable, take my word for it!  Once you make the vanilla base, simply add frozen blueberries (you can also try your favorite fruit!) or some cacao powder to transform the ice cream into different amazing flavors.  And just when you didn’t think it could get better than that, add some delicious cashew cookies to the equation because who doesn’t love ice cream sandwiches!? DISNEY CHOCOLATE COVERED FROZEN BANANAS (COPYCAT)

Disney Chocolate Covered Frozen Bananas dipped in melted homemade chocolate magic shell and covered in peanuts. The perfect slightly healthy treat! Disney Chocolate Covered Frozen Bananas have been a favorite of ours every time we would go to Disneyland. Rationally speaking they’re actually a pretty healthy treat, with just a thin coat of chocolate, the frozen banana has a creamy ice cream texture and the nuts are a healthy snack that will keep you fuller longer. Like my Klondike Bar copycat, these Disney Chocolate Covered Frozen Bananas benefit from my homemade magic chocolate shell that I make with bittersweet chocolate disks and coconut oil. The coconut oil helps the chocolate harden to a shatteringly thin and crisp texture. If you don’t want the hint of coconut flavor (its not very pronounced, I promise) you can also substitute vegetable shortening. Coffee Popsicles

Want a fun summer twist on a classic morning drink? You could always just do some iced coffee (really, you HAVE to try the frozen caramal macchiato – so good!), but why not try some coffee popsicles too?! I love making popsicles this time of year and these are just one more fun option—especially for coffee fans! They couldn’t be any easier to make.  You’ll be basically just prep your coffee to your liking and freeze in popsicle molds. If you have an instant pop maker like our favorite (affiliate link) Zoku Quick Pop Maker, you could have them pops ready in less than 10 minutes! FRESH PINEAPPLE FROZEN YOGURT RECIPE

Summer is not over for me yet!  I have been making this fresh pineapple frozen yogurt recipe and it is getting devoured in our house!  We are eating it scooped in a bowl, frozen in popsicle molds and I have made batches and froze in ice cube trays and it is perfect for smoothies!  It’s light and fresh and 3 ingredients.  You can’t go wrong!
