This is the best damn broccoli ever.  The crazy thing is, this recipe is so simple! It is not much more effort than steaming them in the microwave, though it does take longer because you bake the broccoli. Baking is the key! Roasting broccoli creates a flavour that is light years away from plain steamed broccoli, it sweetens it and you also get the caramelisation. Plus, it sucks up the flavour of the lemon juice when you drizzle it over the broccoli while still hot. I tried it once with steamed broccoli and it didn’t absorb the lemon juice at all. This Clean Eating Chicken Chili is absolutely delicious! I’ve made it twice since I originally posted, and it’s only been three weeks. This hearty and healthy chili recipe is lightened up with ground chicken and is a yummy clean eating recipe PLUS it’s 21 day fix approved. INGREDIENTS: 1 tbsp olive oil 1 lb ground chicken 1 onion, chopped 1 red bell pepper, diced 1 cup chicken broth 1 can black beans 1/2 cup frozen corn 1 can fire roasted tomatoes (14oz) 1 can tomato paste (roughly 1/4 cup) 1/4 cup applesauce 1 tbsp ground chili powder 1 tsp cumin 1 tsp oregano 1 tsp thyme 1 tsp garlic 1/2 tsp cayenne DIRECTIONS: Heat a large pot over medium heat and add the olive oil. Once that is heated add the ground chicken and scramble fry until it’s cooked (about 7-8 minutes). Add the onion and red bell pepper and cook for 3 minutes. Since discovering Northwest Wild Caught Salmon earlier this year, I’ve been having fun finding different ways to prepare and enjoy this lovely fish.  I was lucky enough to pick up some nice sockeye salmon at Sam’s Club. This week Stuffed Salmon was on the menu at home, and I decided to try something a little different with the stuffing using cream cheese in my stuffing mix. I made this casserole a few weeks ago for my dad and his friend who were coming over to do some odd jobs at my house in Nashville. They loved it and kept asking for seconds. It is very filling and will satisfy a heart appetite for many hours. I used to love casseroles as a kid such as potatoes au gratin, mac and cheese (try my sub recipe here) and tuna noodle casserole but this one is just as good without the gluten and dairy. Grilled Zucchini Nachos

Zucchini season is definitely here! The stores are full of it and it 's pretty cheap so I picked up a lot of it with the plan to start off by making these grilled zucchini nachos! The idea is to slice the zucchini into 1/4 inch discs, grill them until just tender, but still crisp, and then to top them with a bunch of nacho toppings including plenty of melted cheese! As far as the toppings go I start out with some grilled corn off the cob, black beans, tomatoes, jalapenos, onions, avocado, cilantro and a finish of sour cream. With all of the fresh summer ingredients, these grilled zucchini nachos are pretty healthy in addition to being nice and tasty! One of the great things about these zucchini nachos is that you can top them with whatever you want so feel free to use your favourite nacho toppings!
