CRISPY BAKED GARLIC PARMESAN CHICKEN WINGS

I am so excited to be sharing these super yummy Crispy Baked Garlic Parmesan Chicken Wings with you today. These wings are baked not fried, but you cant even tell the difference. They turn out super crispy without frying them. Great as an appetizer on game day or entertaining, or serve as a main dish with a big salad. Steaming the wings first assures that they stay moist. You can even be done the day before then all you have to do is bake them and toss them in the garlic Parmesan mixture. I recommend you double the batch because these will go super fast. INGREDIENTS 2 lbs chicken wings 4 tablespoons olive oil 4 tablespoons of butter 2-3 heaping tablespoon of garlic 3 heaping tablespoons of chopped parsley ½ teaspoon salt ½ cup of grated Parmesan cheese INSTRUCTIONS Place a 8-quart saucepan with a steamer basket with 2 inches water. Who loves BROWNIES?! The chocolate-y treats are one of my “go-to” desserts when company comes over, so I like to have several different brownie recipes on hand. When my family saw a recipe for Cheesecake Brownies, they decided to give them a try. Let’s just say I’m so glad they did because this recipe was GREAT!! Let me tell you why… Um – yeah… cheesecake brownies (aka cream cheese brownies) are delicious! I admit that I usually serve ice cream with traditional brownies, but these guys are great on their own!! And can we all admit everything is better with cream cheese?!! For when hunger strikes. INGREDIENTS 1/2 c. Caramel 1/4 c. peanut butter 3 bananas, sliced into 1/2" coins 1/3 c. chocolate chips, melted 1 tbsp. coconut oil 1/4 c. Chopped roasted peanuts DIRECTIONS Line a large baking sheet with parchment paper. In a medium bowl, combine caramel sauce and peanut butter and whisk until well combined. Spread a small amount of the caramel mixture onto each banana slice then place on baking sheet. In a small bowl, whisk together melted chocolate and coconut oil. Spoon about a teaspoon of chocolate onto each banana then sprinkle with peanuts. Freeze until the chocolate sets and the caramel hardens slightly, about 5 minute. Serve immediately. Since going gluten free my doughnut dreams have been somewhat shattered and my relationship with these baked goods have come to a stand still as I have yet to find a doughnut that tastes like the Krispy Kreme’s I used to devour and love. Fed up with waiting, I decided to make own version inspired by a peanut slice I picked up at The Good Earth a while back. I had to satisfy my doughnut cravings somehow and this was the perfect flavour to do it with because let’s be honest these nutty caramel chocolatey rings scream deliciousness. STUFFED SALMON WITH CREAM CHEESE AND CRABMEAT

Since discovering Northwest Wild Caught Salmon earlier this year, I’ve been having fun finding different ways to prepare and enjoy this lovely fish.  I was lucky enough to pick up some nice sockeye salmon at Sam’s Club. This week Stuffed Salmon was on the menu at home, and I decided to try something a little different with the stuffing using cream cheese in my stuffing mix. The best three ingredient recipe I have every posted…well actually, it may be the only three ingredient recipe I have ever posted, but either way, this is the real deal.  Fancy enough for company and easy enough for a super weeknight meal! Spread a couple tablespoons of cream cheese onto the chicken, leaving an edge around it so the chicken seals and the gooey lovely cream cheese doesn’t sneak out. What is pimento cheese? Pimento cheese is a treasured Southern dish. It is sometimes referred to as “the pâté of the South”. The base of the recipe is pretty simple – shredded cheese is combined with mayo and diced pimentos . Everyone has their own little variation though – some people use different types of cheese, add spices, or even bread and butter pickles (yuck!). My recipe, the one I’m sharing with you today, includes diced jalapenos, white pepper, and celery salt. My personal favorite cheeses for this dish are sharp cheddar and extra sharp white cheddar. It is best to buy block cheese and shred it yourself. Store bought shredded cheese is full of preservatives that alter the taste. Tillamook makes an excellent version of both cheddars.
